    Lemon Thyme Cod

    I have found my go-to fish recipe. It is so simple, it is ridiculous. And it is so delicious, it is that much more ridiculous. Like buttery, melt-in-your-mouth wow. Here it goes: Ingredients: 1-2 lb black cod (I usually get wild-caught from the farmer’s market šŸ™‚ 1/2 lemon ~2T fresh thyme (personally – the more the better!) pink himalayan salt parchment paper Directions: Pre-heat oven to 350 degrees Line baking dish with parchment paper Place fish skin-down in dish Sprinkle with thyme and salt to taste Squeeze fresh lemon juice over fish Bake for 15-20 min until flaky Try not to eat it all straight out of the pan šŸ˜‰…

    I just came back from our annual Global Sales Conference in Boston last week and it reminded me about how much I love the people I work with and being able to connect with my big Delta family! There were definitely some great speakers and events, but I think I enjoyed just talking (and dancing haha) with everyone the most šŸ™‚ As always on my travels, I try to seek out (1) good and (mostly;) healthy gluten-free food, (2) a great workout ā€“ whether outside or at a local gym, and (3) new experiences or sites in the city Iā€™m visiting!
