    Coconut Berry Bowl

    It’s 70 and sunny in LA. And it’s February. Coming from Minnesota, I can handle this! I’ve stayed away from smoothies for a while, instead opting for cooked foods to ease my digestion and add warmth during the winter season. However it felt just right for today 🙂 I’m currently on a limited “autoimmune”-type nutritional protocol to reduce systemic inflammation and heal my gut, which means no nuts (or legumes – aka peanut butter…gasp!) for the time being.     My Journey to Health, Part II: New Beginnings

    Taking more steps forward, my health journey continued! The Surgery and Move Following my celiac diagnosis and the end of my collegiate running days, I continued on with the last year of my MBA. From there I was blessed with the opportunity to join Delta Air Lines down in Atlanta. However, not before a surgery on my colon to repair a colorectal prolapse (from prior health complications), which left me with a 4″ scar across my lower abdomen.     Power Pudding

    I crafted a bowl of chia pudding this morning that was so delicious and nutritious, I have to share 🙂 It’s super quick, easy, and the perfect well-rounded breakfast to start your day! Also, being gluten/grain-free, dairy-free and soy-free, it’s highly anti-inflammatory 👍   To make, soak the following overnight: 3T chia seeds (I used Bob’s Red Mill) 1c unsweetened vanilla almond milk (I used Califia Farms) Dash of vanilla and cinnamon to taste Then mix in: 2T Collagen Hydrosolate (Great Lakes Gelatin brand is my preferred – it’s a great source of protein, amino acids and overall nutritional support!)
