The Breakfast Scramble

Introducing The Breakfast Scramble a.k.a. “Whatever I have in my Fridge”.

Last night I realized I didn’t have anything ready for breakfast for the remainder of the week. So instead of being lazy and just picking up something on my way to work (and because I really do love my homemade food), I decided to get crafty.

The breakfast scramble is truly a wonderful thing because it is so easy and different every time I make it. Just depends on what ingredients I have on hand. This time I went with the following (to make 2 meals):

  • 4 eggs + 2 egg whites (PROTEIN!)
  • 1 sweet potato (Complex carbs)
  • 1 zucchini (Veggies)
  • 1 yellow bell pepper (More veggies)
  • 1 bunch of kale (GREEN veggies!! My favorite kind;)
  • ~2T pimento cheese (Flavor!)
  • Simply Organic All Seasons Salt to taste
  • ~1T Coconut oil (Healthy fat) to saute veggies

All I did was heat up the coconut oil in a large skillet, added the chopped up veggies – first zucchini and pepper because they take longer to soften than the kale.

Then the kale (stems removed)…I love my greens, so I loaded up on kale haha.

I added a little seasoning here and again at the end.

Once the veggies were mostly cooked, I created a little hole in the center and cracked in the eggs.

Let them cook a little, then stirred everything together and continued to cook until the eggs were solid.

Next comes the pimento cheese, which I just mixed into the scramble until evenly distributed and melted:)

Lastly, I tossed in the cut up pieces of baked sweet potato, did a final stir and ta-da! Finished. Maybe took 10-15 min total and my taste test was delicious:)

And it was just as good heated up the next morning for breakfast!
