Coconut Berry Bowl

It’s 70 and sunny in LA. And it’s February. Coming from Minnesota, I can handle this! I’ve stayed away from smoothies for a while, instead opting for cooked foods to ease my digestion and add warmth during the winter season. However it felt just right for today πŸ™‚

I’m currently on a limited “autoimmune”-type nutritional protocol to reduce systemic inflammation and heal my gut, which means no nuts (or legumes – aka peanut butter…gasp!) for the time being. Oh how I miss them haha. But I can have everything coconut – oil, butter, yogurt, milk (the pure, unprocessed, whole fat kind) – and that is amazing. Adding to that amazingness is the raw, probiotic coconut yogurt I found at Moon Juice. Perfect for a smoothie creation πŸ™‚

So I tested out a new combo today and (in my humble opinion) it turned out fabulous! I didn’t measure everything, but here is my best guess:

Blend together:

  • 2/3c frozen organic blueberries
  • 1/2 small banana
  • 3oz (1/2 container) Moon Juice coconut yogurt
  • 1/2c water
  • 1c frozen kale (fresh works too πŸ™‚ )

Stir in:

Top with:

  • heaping spoonful of bee pollen
  • 1T roasted unsweetened coconut flakes

Enjoy!! I like it in a bowl with a spoon to appreciate the goodness πŸ™‚

  

Nutritional profile is approximately:

325 cal
19g protein
10g fat
44g carbs (26g sugars – none added!)

I’m staying away from protein powders right now, but that could be a good option to add for more protein! I’m sure nut butter would be delicious as well (of course haha)
