2(+) Ingredient Banana Pancakes

These are my lazy day weekend favorites…so easy, but so delicious. And you mostly likely have all the ingredients you need already on hand! Another bonus is that they are high in protein, which I’m always trying to get more of:)

At the basic level, when you’re in a pinch, all you need is:

  • 1 ripe banana, mashed
  • 2 eggs

I usually go with the above plus:

  • 2T flax meal
  • Vanilla to taste
  • Cinnamon to taste

Other things you can add include almond butter, almond flour, coconut flour, protein powder, milk (any kind), etc either in addition to the flax meal or in place of. You can just modify the dry and wet ingredients to get whatever consistency you prefer. It’s hard to go wrong with pancakes.

I also love adding mix-ins – my favorite being blueberries, followed by chocolate chips of course haha. As well as toppings – peanut butter is especially tasty:)

Then all you have to do is whisk everything together and toss on a heated skillet!

These I made randomly at our cabin weekend with just a banana, 2 eggs, plus a little almond butter and almond milk. They were fabulous if I do say so myself;)
